Yesterday I cut myself rather badly while reaching inside my knife roll to grab the santoku. The bread knife's edge had come lose and I almost sliced the top of a knuckle off my right middle finger. It was all downhill from there, as I was fumbling around with a bandaged finger inside a finger condom trying to keep up with the rest of the class.
I thought I could, but then I burned my right index finger (not too bad but bad enough that it hurts near a source of heat), then the palm of my left hand (minor), then I had an accident with a Vitamix blender that fortunately did not involve loss of life or limbs but I messed up the station of one of my classmates and spent the next 15 minutes cleaning up.
At that point I knew there was no way I could finish my four dishes so I finished two and threw out my handmade fettuccine, my sautéed pancetta, and so on. The carrot and ginger puré soup was good, and the chicken stock uneventful.
I don't know what I can do in class today as the cut hurts and I can't bend my finger and I am honestly worried that if I don't give it a rest for a couple of days I may lose that flap of flesh that's detached. A scar I can live with, but that would bother me considerably.
On the bright side, today we are having lunch at the school's bistrot – 561 – the only five star restaurant in the world run entirely by students. The event is called Future Forward and that's all I know about it.

April 16th, 2008 at 10:32 AM ouch! I am sure it is throbbing and you are terribly aware of it. Carrot and ginger puree soup -- sounds wonderful. Chin up!!

And I hope your five star lunch was a bit of what we Norwegian call 'a bandaid on the wound', that is, some consolation when you've hit some bad luck! Btw I just discovered the 'No need to knead' book on your sidebar, that sounds like something for me!

Regarding your ‘coffee-lesson’, I was always taught (we own a Gaggia espresso machine) that when you make a lungo, you should not leave the cup longer under the spigot, but make a regular espresso and add hot water through the steam pipe (not steaming water though). The supposed reason is that the coffee will taste more bitter when the water runs through it longer (I guess about the same reason you say why people would want a ristretto). I was wondering if you would think this is a good idea, of that it is nonsense? Susanne
April 16th, 2008 at 01:30 PM I'm so sorry to hear about all that injury. Do you think you could get to a doctor who could banage it up better for you? More to the point, why did the knife blade come loose? Could you sue the knife company?......*S*

April 17th, 2008 at 04:33 PM Ooh! That's quite a collection of injuries! If it helps any, "I feel your pain." Just last week I was preparing a vegetable saute and sliced the skin off my finger the nail (where it grows from); it still hurts (I'm the resident Kitchen Klutz). Maybe you just had to get these out of the way, and hopefully no more calamities befall you.
